How many super foods can you cram into your snack? Today, up in the mountains, it’s a beautiful day. When the sun comes out and I start to defrost, more than ever, I feel a need to be good to myself. I’m sure you feel the same. This morning I enjoyed a brilliant lemon.carrot.pear.silverbeet.kiwifruit juice, and when morning tea/brunch/lunch/I’m-just-basically-always-hungry rolled around, I wanted to treat my body to an antioxidant overload! Instead of just sipping away at my green smoothie, I decided to try something different.

Green Smoothie Soup (raw, vegan, gluten free, soy free)
2 big handfuls of spinach – Do NOT be scared away by the spinach, or the green colour. You can’t taste it
1 frozen banana
1/2 cup frozen strawberries
1 cup of homemade cacao.date.oat milk*
2 tablespoons of cacao.date.oat milk solids**
Top it all off with-
8ish dried dates, chopped
2 biiiiiiig spoonfuls of buckwheaties (soaked then dehydrated)
2 biiiiiiig spoonfulls of chia seeds
1 tbsp home made walnut.macadamia butter
Yum! You could put ANYTHING on top: more cacao nibs, sunflower seeds, goji berries, maca powder, organice raw honey, coconut oil/butter…..! Your body thanks you after you eat something delightfully full of purity like this.
It’s just a matter of blending your smoothie ingredients (no vitamix here folks: I’m a minimalist! I just use a stick blender and it’s perfectly fine)- be sure the consistency is nice and thick. And then sprinkle away with your toppings. I enjoyed this so much more then slurping on a smoothie. The textures were amazing, lots of chew, lots of crunch :) This was also beautifully sweet, and I didn’t even have to add honey. Be creative, you can truly use any fruit, and you truly cannot taste the spinach. I promise. So, my challenge for you is to make yourself a meal, and tell me how many superfoods you can cram in there. I managed spinach, cacao, buckwheat groats and chia seeds.
*/** This is a fantastic example of how to make homemade nut milk. And it is delicious. I love the process, it’s very organic, both literally and emotionally, but it can be quite expensive. So, recently I soaked a cup of oats (raw organic oat groats would be ideal) with a handful of dried dates and cacao nibs over night, whizzed everything up the next day with an extra litre of water, then strained. The liquid you’re left with is your wonderful, sweet, chocolate milk, and the oaty.datey.chocolatey leftovers are your solids, perfect for smoothies. I also like to use mine as face and body exfoliator in the shower!
